Winemaking Philosophy
Paul Mathew Vineyards is committed to low input winemaking using indigenous yeast and Malolactic bacteria.
This process is much slower and more time consuming but produces wine lush on the palate with seamless flavors.
Vineyards
Weeks Vineyard is on Occidental Road near Jonive total of twelve acres planted to chardonnay.
Planting began in the 1980’s to wente clone. This vineyard is located on goldridge soil just
east of the town of Occiddental.
Winemaking
Grapes came in on October 20th, 2010 at 22.5 brix. The yield was only 1.1 tons/ acre and the grapes were at
full maturity; yellow skins and black seeds. The grapes were whole cluster pressed to barrel, fermented
for 5 weeks. ML was complete in mid April. After 10 months in oak, the wine was bottled without fining or filtration in July 2011.
Winemaker's Notes
This wine is unfiltered showing a touch of cloudiness to look at with brightness of fruit and acidity on the nose.
The palate offers refreshing star fruit, pear with mineral notes and a full mouth feel with great
acidity and length. A true food wine.
